Cherry Boccocini Stuffed Meatballs with Homemade Sauce

I made these yummy cheese stuffed meatballs & sauce for my family last night & they ate the lot! Yay, this makes me a very happy lady; Empty plate’s full bellies & a new recipe to add to my collection.

When I made these I really wanted to be packed full of fresh veggies; we eat these on a bed of fresh rocket & baby spinach to add more veggies to the mix & topped with torn up boccocini, but you can serve it with any side of your choosing.

Meatball ingredients:

500g mince beef

1/2 finely chopped small onion

1 grated red Pontiac potato

2 small carrots grated

1 tsp. salt

1 tsp. pepper

1 tub cherry boccocini drained

Sauce recipe:

Tbsp. Olive oil

1 1/2 finely chopped small onions

1 1/2 cup chopped mushrooms

1 green capsicum chopped

1 zucchini chopped

2 tins crushed tomatoes, mine have basil & oregano in them but plain crushed tomatoes are fine

4 ripe tomatoes roughly chopped

1 tin drained corn

1 tsp. salt 

1 tsp. pepper

1 tbsp. Italian dried herbs

1 tsp. dried chilli flakes

To Serve:

1 tub cherry boccocini

Washed rocket & baby spinach

Method:

In a pan heat the oil, place in onions & stir until starting to golden.

Add mushrooms, capsicum, zucchini & chopped tomatoes; stir through & cook for a few minutes.

Add tinned tomatoes & 1 tin full of water (I put water in half of both tins and swirl around in the tin first before adding to get the remaining tomato out.) 

Add corn & stir through, bring to boil.

Once it comes to the boil, cover with lid & reduce heat to a simmer.

Allow to simmer for 1 hour, stirring occasionally.

While the sauce simmers I make the meatballs.

In a bowl combine meatball ingredients, once combined form meatballs in hands. I use 1/2 a cup of meatball mix per ball. Once in a ball press thumb in top of ball to make a whole for the boccocini. 

Place 2 cherry boccocini in the whole & squeeze whole shut.

Place made meatballs on a plate, once all the meatballs are made, cover with cling wrap & place in fridge until sauce has simmered for an hour.

After an hour of simmering, lift lid, place meatballs in sauce, cover with lid & cook on simmer for half an hour.

Serve meatballs with your choice of side & top with torn boccocini.
